Sepage, assemblage Sepage, in its correct combinations is a pure form of synergy of different varieties, which, interacting successfully during fermentation, give stability to the result in the wine. Is perfect symmetry and synergy between varieties that seem impossible to combine at first glance, and our answer is “YES” … similar to the complete symmetry and synchronization between the three basic geometric shapes – triangle, circle, square, depicted on the label of our Sepages.

The grapes for this red assemblage sepage come from two different vineyards from the Charalambievi vineyard – Dornfelder is grown on the KALUGERITSA vineyard, where the soil is gray forest, powerful, drained from a gravel base on karst, and the altitude is about 180 meters, and there Dornfelder usually ripens in the first week of September. And the Cabernet Franc is picked from the DABNIKA vineyard, where the soil is powerful, well-structured, drained on a karst base, and here the altitude is again about 180 meters. Both vineyards extend from the left bank of the Vit river.

Hand-picked with selection at 12.09.2020. Dornfelder was picked later than its usual ripening period at 27.5% sugars and over 30% total raisin content; Cabernet Franc was picked at 23.5% sugars and in very juicy and fresh condition.
