Dry whyte wine from Sauvignon blanc (50%) and Kaylashki misket (50%)
Sepage, assemblage Sepage, in its correct combinations is a pure form of synergy of different varieties, which, interacting successfully during fermentation, give stability to the result in the wine. Is perfect symmetry and synergy between varieties that seem impossible to combine at first glance, and our answer is “YES” … similar to the complete symmetry and synchronization between the three basic geometric shapes – triangle, circle, square, depicted on the label of our Sepages.
The grapes for this white sepage assemblage come from two different vineyards of the Charalambievi vineyard – the Sauvignon Blanc is grown on the NAD PESHTERITE vineyard, where the soil is shallow gray forest on a karst base with a high clay content and an altitude of 250 meters and there the Sauvignon Blanc usually ripens in the last week of August. On the other hand, the Kailashki Misket is picked from the MOGILITE vineyard, which is the youngest vineyard of the Charalambievi and the soil is shallow gray forest on a karst base with a high clay content and an altitude of about 300 meters. Both vineyards extend from the right bank of the Vit river.
The grapes are cooled before consumption.
Vinification of both varieties simultaneously in small vessels with constant temperature control, prolonged fermentation and a specific strain for the expression of varietal aromas.
Fresh and aromatic with elegantly intertwined varietal characteristics of the two varieties - the local Kaylashki Misket gives "sweetness" and floral notes, Sauvignon Blanc gives freshness and grassy notes; medium-bodied with good balance, delicate minerality and very appropriate freshness.
